Speciality 05.18.06 − fats, essential oils and perfume-cosmetic products technology − National Technical University "Kharkiv Polytechnic Institute". Ministry of Education and Science of Ukraine, Kharkiv, 2016. The dissertation is devoted to the basis of technology of complex processing of sun-flower cakes obtained from dehulled sunflower kernels. During the work it was ascertained that sunflower oil and chlorogenic acid extraction rates depend on solvent type, temperature, and extraction time in the cavitation facility. The regression equations for the abovementioned processes were derived. Antioxidant properties of solids extracts obtained from dehulled sunflower kernels (SE) were discovered. It was shown that all of the investigated SE terminate the chain reactions during the propagation step. Complex technology of sunflower cakes processing obtained from dehulled sunflow-er kernels was designed. This technology allows obtaining of extracted oil, sunflower meal (or proteinrich flour), and fat-soluble antioxidant. The results of the work are adopted at "New Energy-Efficient Technologies", LLC, "Kharkiv Biscuit Factory", OJSC, and implemented in the educational process at the Department of Technology of Fats and Fermentation Products of NTU "KhPI".

Full textThe thesis for the candidate of technical sciences degree in specialty 05.18.06. – Technology of fats, essential oils and perfume-cosmetic products. – National Technical University "Kharkiv Polytechnic Institute" Ministry of Education and Science of Ukraine, Kharkiv, 2016. The thesis is dedicated to the scientific substantiation of the perspective non-waste fat neutralization technology. It was confirmed experimentally that oil fatty acids can be neutralized with water-ethanol solutions of alkali metal carbonate to the norms in the acid number (< 0.2 mg KOH/g). Rational technological parameters of sunflower oil fatty acids neutralization with water-alcohol solutions of alkali metal carbonates were defined experimentally and using polynomial approximation. Effective reaction rate constant and the activation energy for each stage of interaction between fatty acids and water-ethanol solutions of alkali metal carbonates were calculated. Technology of fatty acids obtaining from soapstock using carbon dioxide was proved scientifically. The results of experimental studies proved that the sodium or potassium salts of fatty acids decomposition with carbon dioxide in certain rational conditions can exerted at a depth of over 90 %. The technology of non-waste fat neutralization with sodium carbonate or potassium water-ethanol solution with obtaining from soapstock the marketable fatty acids product which meet the requirements of regulatory documents were developed. Alkali metal carbonate water-ethanol solutions were proven to be used as cost-effective neutralizing agents in the technology of alkaline fats neutralization.

Physical and chemical properties and fatty acid composition of industrial designs primary oil have been determinated. The study established effective technological options to reduce acid and peroxide numbers oil by extraction refining. Effective technological parameters of carrying out of enzymatic esterification of oil with processing anion has been discovered; as a result of that we received product with high physiological value by the content of ethyl esters of fatty acids. According to analytical and experimental studies rational conditions of fractional crystallization of greasy Coriander oil have been defined. The study shows mathematical models of dependence of output target fraction of oil and its melting point from main parameters of fraction of refined oil. Physical and chemical, medical and biological characteristics of fatty and acid composition of samples refined oil have been defined. It proved that it meets the requirements of the food. On the basis of the experimental research was developed technological scheme of complex processing fatty oils Coriander, including extraction refining and fractional crystallization. It was found that through the use of new technology may get two products - "Petrozelin Coriander" and oil of Coriander for salad. Technological properties of these products were defined that allow their use in recipes of baked goods.

Full textThesis for the Doctor's of Engineering by specialty 05.18.06 − technology of fats, essential oils and perfumery and cosmetic products. − National Technical University "Kharkiv Polytechnic Institute" of the Ministry of Education and Science of Ukraine, Kharkiv, 2018. The thesis is devoted to the scientific substantiation of the application of the system complex approach to the creation of modern schemes of techno-chemical control of raw materials and finished products of fat-and-oil production with the use of exclusively instrumental methods of analysis: gas-liquid chromatography, high-performance liquid chromatography, gas chromatography, zonal capillary electrophoresis, etc. It has been developed the scheme on the basis of theoretical and experimental data generalization of oilseed, sunflower oil and oily products contamination by natural and anthropogenic ecotoxicants, namely pesticides, polychlorinated biphenyls, polyaromatic hydrocarbons, phthalates, foreign impurities of organic and inorganic origin, and food additives. The standardized method of determining wax-like substances has been improved. The distribution of pesticides of various classes in sunflower seed and products of its processing has been experimentally investigated. Scientifically grounded methods of pesticide determination have been developed including their simultaneous presence. A priority method for determination of migrating phthalates from PET packaging in vegetable oils and fat-containing products has been developed. The necessity of using methods for determining the fatty acid, acylglycerol (including individual) and composition of the sterol fraction for the identification of oils and fats, in particular for the foreign impurities detection of mineral (mineral oils) and organic (nonfood chicken fat) origin, i.e. for goals of falsification, has been grounded scientifically and theoretically. A scientific and methodological basis for establishing a national standard for controlling the content of preservatives in fatty products has been created. Practical recommendations for improving the schemes of technochemical control of raw materials and finished products in the sunflower oil production, including packed in plastic containers, margarine products, mayonnaise, salad dressings and blended oils have been developed.

Full textO presente estudo teve como finalidade examinar fatualmente os acontecimentos, pensamentos e emoções que os homens gambianos residentes na Gâmbia possuem em relação a uma questão que lhes é tabu, a circuncisão feminina. Foram analisadas 11 entrevistas efetuadas a homens com idades compreendidas entre os 20 e os 45 anos. Todos os participantes possuíam um nível de escolaridade acima da média, para as comunidades em questão, e são todos muçulmanos. Responderam as mesmas questões: O que é a circuncisão feminina?; Quer falar um pouco sobre os tipos de circuncisão feminina que existem?; Por que se faz a circuncisão feminina? e; por último, A circuncisão feminina deve continuar? Quer falar um pouco sobre o assunto?. Após a constituição do corpus de estudo efectuou-se a análise temática dos dados. Esta analise permitiu identificar uma serie de concepções solidamente interiorizadas e com forte componente cultural. Os sistemas de símbolos e de significados encontram-se grandemente influenciados pelo regime superestrutural, praticamente estático, destas comunidades. Assim, verificase que a modificação genital feminina étnica rege-se por uma poderosíssima componente educacional, que tanto pode ser ao nível da religião (sem no entanto, estar inscrita no Corão) e/ou dos processos tradicionais. O poder participativo que os homens possuem em todo o sistema sócio-cultural, político e económico é determinante na sociedade. São estes que constituem o grupo hegemónico que determina a manutenção ou a alteração de comportamentos/práticas. Considerando os seus testemunhos chega-se a conclusão que a erradicação da prática está longe de ser uma realidade. Que a manutenção e o reforço da mesma, por parte de quem se encontra informado sobre as consequências nefastas, é uma realidade. Os resultados induzem a um repensar sobre crenças e a criação de condições tanto ao nível hospitalar como de formação das profissionais tradicionais que executam este procedimento. Deste modo, fica salvaguardado o direito humano à diversidade cultural, o que vai permitir coexistir e criar espaço para o diálogo entre os praticantes e os outros povos.
This study aimed to examine the events factually, thoughts and emotions that male Gambians, residing in Gambia have no relation to the taboo issue of female circumcision. We analyzed eleven interviews conducted with men from the ages of 20 to 45 years. All participants had an education level above the average for the communities concerned, and they are all Muslims. They answered the same questions: What is female circumcision?; Do you want to talk a little about the types of female circumcision that exist?; Why is it female circumcision? and, lastly, should female circumcision continue? Do you want to talk a little about it?. After the formation of the corpus of study thematic analysis of the data was carried out. This analysis identified a series of strongly internalized ideas and a strong cultural component. Systems of symbols and meanings are greatly influenced by the superstructural, almost static, regime of these communities. Thus, it appears that the ethnic female genital modification is governed by a powerful educational component, be it in terms of religion (without, however, being inscribed in the Koran) and / or traditional processes. The participatory power that men have in all the socio-cultural, political and economic society is crucial. These constitute the hegemonic group that determines the maintenance or alteration of behaviors / practices. Considering that testimonies the conclusion that was reached is that the eradication of the practice is far from a reality. That maintaining and enhancing it, by those who are informed about the harmful consequences is a reality. The results lead to a rethinking of beliefs and creating conditions both in the hospital and training of traditional practitioners who perform this procedure. Thus, it is safeguards the human rights to cultural diversity, which will allow co-exist and create space for dialogue between practitioners and other people.
