Full textThe work deals with the theoretical & practical aspects of increasing the competitiveness of the tourist enterprise. The essence of the basic concepts - marketing, management of marketing activity, competitive position – is revealed. The general characteristic, the analysis of economic activity and management of competitiveness of the tourist enterprise "Geografia" are given, the competitive position on key elements of consumer value is investigated, the set of factors of influence on competitiveness of the tourist enterprise is defined. Measures to improve the competitiveness management of the researched enterprise are proposed and substantiated, the economic effect of the corresponding measures is determined by the method of "marketing ROI".

The work considers scientific and theoretical approaches to the formation of a strategy for the development of gastronomic tourism. The classification of directions and forms of gastronomic tourism is covered. The world experience of formation of strategies of development of gastronomic tourism is considered. The economic and organizational characteristics of the restaurant chain "Resta" and its competitiveness in the market of Odessa are analyzed. Organizational measures have been invented to form a cluster strategy for the development of Resta restaurant chain services. The economic expediency of the cluster strategy of services of the "Resta" network is offered and substantiated.

The first section includes an analysis of the research of theoretical and methodical bases of quality of service, reveals features of increase of quality of service of restaurant business enterprises. The second section determines the organizational and economic characteristics of the "di Mare" restaurant and performs a taxonomic analysis of the basic indicators of an estimation of quality of service in restaurants of the city of Odessa. The third section identifies strategic areas for improving the quality of service in restaurants, proposes a program of measures to improve the quality of service in the restaurant business, and proves that the recommended measures are economically motivated.

Full textThe article deals with theoretical aspects of tourist infrastructure development, and also regulatory-legal and scientific-theoretical approaches for optimizing the management of tourism infrastructure development in the region. The analysis of the tourism infrastructure state and recreation in the Odessa region, namely the activities of actors in tourism business and also dynamic development in hospitality industry was carried out. The structure of an operational goals of the strategic priority in the tourism sphere of the Odessa region has been developed. For forecasting development of hotels infrastructure, the calculations of the dynamics of the rate of increase in the length of staying tourists in hotels in the Odessa region were made. In this paper we propose the design principles of organizational structure of the of the management system of regional tourism infrastructure development and also the measures have been developed in the improving the management of tourism infrastructure development, namely the network approach to the formation of regional hotel chains, based on the provisions of the Development Strategy of Odessa region for the period 2021-2027.

The paper also gives a general description of the enterprise that is the object of the research - LLC «Network of travel agencies "Come with us"», the analysis of the main indicators of its economic activity; the dynamics and structure of the personnel of the enterprise and the state of personnel policy are analyzed; the efficiency of the current personnel management system of the tourist company in modern conditions is evaluated. In the end the ways of optimization of personnel policy of the tourist enterprise are resulted. This master’s thesis is devoted to the issues of ensuring effective management of labor resources of the restaurant business in the modern conditions of its operation. In the course of the research the issues of peculiarities of formation and functioning of the restaurant market in Ukraine, stages of personnel selection and modern methods of labor resources management at restaurant enterprises was considered. The paper analyzes the organizational, managerial and financial activities of the restaurant “Oscar”, investigated the professional component of its human resources. In order to ensure effective management of the restaurant's labor resources, measures was proposed to improve its organizational environment, implement a system of evaluation and certification of personnel, proposals for training of human resources in the field of information and organizational support technologies. The structure of the payroll fund in 2018 - 2019 has been analyzed. The analysis of financial and economic indicators of Carillon LLC was carried out. It is proposed to design and implement a new systematic, internal tour for Carillon LLC to Lviv and Synevir National Nature Park. Costing and break-even point determination for this tour have been carried out. The economic feasibility of introducing a new tour is substantiated.

Approaches to determining factors of competitiveness of services of tourist enterprises are analyzed. The role of marketing in enhancing the competitiveness of tourism services has been identified. The general description of the tourism enterprise «Otdyih na slavu» is given and the dynamics of economic and marketing activity is analyzed. Measures of information support of competitiveness of the travel agency «Otdyih na slavu» are recommended and economically justified. The concepts and types of rural green tourism are considered, the potential of development of rural green tourism is investigated. Scientific approaches to forming services of rural green tourism entrepreneurs are highlighted. The general description of the tourist operator of Bessarabia-Tour is given. The financial and economic activity of Bessarabia-Tour is analyzed. The competitive environment of the enterprise is given and the SWOT - analysis of conditions of development of rural green tourism services is carried out. The expediency of developing a tourist product of rural green tourism at the Bessarabia-Tour tourist enterprise is substantiated. Methods for evaluating tourist product promotion channels are suggested.

The ways of improvement of franchising relations in the sphere of tour operator and travel agencies activity are offered. The feasibility of implementing an investment project to open a travel agency «TPG-agency 2» is substantiated. The article considers the essence and features of the quality of hotel services; the basic approaches to quality of service in hotels are being studied; the main methods of assessing the quality of service provision at the hotel industry are being systematized. The analytical part considers the organizational and economic characteristics of the hotel «IL Decameron»; the quality of service provision in this means of accommodation is determined according to a certain method; an assessment of the competitive position of the hotel was made, an analysis of the infrastructure designed for the organization of business tourism in Odessa «IL Decameron» to explore opportunities to improve the quality of service. The suggestions are aimed at improving the quality of services at the hotel «IL Decameron». A set of measures to improve the skills of staff and improve the elements of the automation system in the hotel «IL Decameron» and made their economic justification.

The analysis of the basic organizational and economic indicators of "Fagot Travel Plus" is made, the target audience of consumers of travel firm "Fagot Travel Plus" is defined, the potential demand for services of travel agency is analyzed. According to the results of the research, the directions of stimulating the demand for the services of the travel company "Fagot Travel Plus" are proposed, the expediency of creating a new tourist product is substantiated, the measures for the promotion of the new tourist product are determined
