Der volle Inhalt der QuelleOdours deemed harmful by the consumer and described as "stable", "horse sweat" or "burnt plastic" can be found in wines. The responsible molecules are volatile phenols, produced by a spoilage yeast: Brettanomyces bruxellensis. This species is particularly well adapted to the wine environment and can resists many stresses such as a high alcohol level, a low pH or high levels of SO2, more or less efficiently depending on the strain considered. Indeed, the species displays a very high genetic diversity, even at the scale of the Bordeaux vineyard.The main objectives of this thesis were (1) to evaluate the variability of the permissiveness among Bordeaux red wines regarding the contamination by different strains of B. bruxellensis, (2) to show a possible relationship between the chemical composition of wines and their permissiveness, using non-targeted metabolomic analyses, and (3) to study the effect of different fractions obtained from a difficult wine.The studied strains showed very different behaviors depending on the red wines considered. These differences can be linked to several factors such as the vintage, the winery, or the wine batch. Chemical composition analyses made it possible to rule out several compounds not involved in permissiveness but also to identify families of molecules that would reduce the vulnerability of certain red wines from the Bordeaux area
