Purpose The purpose of this paper is to examine millennial customer perceptions of food trucks and to identify factors that can foster their behavioral intentions pertaining to food trucks.Design/methodology/approach The study is based on a sample of 247 millennial customers of various food truck vendors in the United States and was assessed using ordinary least squares regression analysis.Findings Food truck image and employee friendliness were found to impact both customer satisfaction and word of mouth behavior; however, the other hypotheses were not supported.Research limitations/implications There were two limitations. The first was that one of the constructs did not achieve the minimum average variance extracted. The second was that data collection was done in a single city in the United States; therefore, future research could overcome these limitations through a refinement of the construct’s items and targeting more cities.Originality/value There has been limited academic research on the millennial customer perceptions of the food truck phenomenon. This research addresses that gap through a field study that examines factors that contributed to the growth and popularity of food trucks among millennials

In Malaysia, food trucks are a popular business among industry players due to the nature of the business being much easier and more comfortable for the customer, and the food served is cheaper than the restaurants. Despite the immense attention alongside the growth revenue towards the food truck business in 5 years, they are also a few unwanted cases arise caused by poorly handling of food throughout the business which is proven that food truck has been associated with almost 70% of disease outbreak (Auad et al., 2018). Although the food truck business has expanded year by year, the growth of food truck activities has triggered certain issues, and some of the issues might lead to serious matters. The first and foremost gap is when it comes to the cleanliness of the food served and sold on the mobile premise (Okumus et al., 2019). The most common question is how the food truck operators prepare their food, the level of hygiene of its' utensils, the preparation of mixed ingredients, and the management waste practice (Donkor et al., 2009). These problems might trigger the halalan toyyiban concept adopted in the practices of the food truck business. This study aimed to examine the concept of halalan toyyiban in the food truck business. The study adopted qualitative research, collecting data through doctrinal and semi-structured interviews. The data were analyzed using content and thematic analysis. The finding indicated that only a few food truckers know halal and toyyiban, and some food truckers are not interested in applying for halal certification for their businesses.

Commercially, innumerable consignments of valuable freight are moved across India every day. On certain routes, there is always a lurking threat to the security of the freight and finding good food is also problematic for the truckers. Truck drivers have a high rate of occupation-related injury and the highest rate of on-job fatality. This project aims to develop an android application for android operating system (OS) platform which helps drivers to get help from their passersby or forthcoming trucks and send alert to their owners if there is any threat in their routes. The Owners can monitor the movement of their trucks and the threats as well. This ensures better communication with drivers on the fleet on the same route under a single corridor. This app is developed using the platform Android Studio which is a free and open-source software.

Cross-docking is a logistics strategy in which products arriving at a distribution center are unloaded from inbound trucks and sorted for transfer directly to outbound trucks, reducing costs and storage and product handling times. This paper addresses a cross-docking problem by designing a mixed-integer linear programming (MILP) model to determine a schedule for inbound and outbound trucks in a mixed service-mode dock area that minimizes the time from when the first inbound truck arrives until the last outbound truck departs (makespan). The model is developed using AMPL software with the CPLEX and Gurobi solvers, which provide results for different instances, most of these with actual shift data from an integrated distribution center of a multinational food company located in Concepción, Chile. The results obtained from the case study are notable and show the effectiveness of the proposed mathematical model.

This article examines ethnic and regional food culture in the United States, focusing on the Jon Favreau film Chef, and analyzes the intertextual impact of sharing food photos in social media spaces on the practice of food consumption and production in the real world. A summary and main research findings are as follows. First, in Chef, America’s diverse ethnic and regional food culture is portrayed through cinematic images of various ingredients and urban spaces along the main characters’ journey to Miami, New Orleans, Austin, and Los Angeles. Each city’s locality and food culture are complexly expressed through unique street scenes that preserve the local history and culture, famous restaurants that have become local attractions, colorful and lively food images, sounds generated during the cooking process, and cheerful background music. Second, this film can enhance understanding of the motivation for setting up and operating food trucks in the U.S. For the protagonist, Carl Casper, Cuban food and food trucks serve as symbols and infrastructure that guarantee his professional autonomy and creativity as a chef. By analyzing its storyline and dialogue, this article examines the ways, meanings, and repercussions of food culture representation in the media by those in the restaurant industry who prepare and sell food themselves, not by food consumers. To recapitulate, Chef is valuable as educational content in that it vividly introduces America’s diverse ethnic and regional food culture, farmers’ markets, and food truck culture. This article will contribute to a better understanding of how the prevalence of digital media can affect and socially reorganize food culture by examining the establishment and operation of food trucks in the U.S. through the film and the relationship between food truck businesses and social network services.

Purpose This paper aims to test whether passive Wi-Fi visitor analytics is a useful and effective method to measure consumer engagement towards food trucks located within an outdoor activation area at an Australian metropolitan university. Design/methodology/approach Using passive Wi-Fi visitor analytics to ping and track smart devices, data was collected over 90 weekdays capturing data from 522,548 unique smart devices. Findings The data collected in this feasibility study was able to identify the most and least popular food trucks by displaying the differences in both bounce and engagement rates, suggesting that passive Wi-Fi visitor analytics are feasible and useful in this context. Furthermore, the results also demonstrate that food truck vendors and marketers should not engage in random rotation, but instead remain static to try and increase familiarity. Originality/value Current visitor tracking technology (i.e. ticketed sales, sales data and survey) is limited as it may not provide an accurate measurement of foot traffic, identify engaged patrons who passed by but did not complete a purchase and be available due to commercial sensitivity and confidentiality. Thus, the current research is the first to examine customer engagement (i.e. unengaged walk-by vs engaged but bounced vs engaged sales) with food trucks within an activation area by using passive Wi-Fi visitor analytics.

This paper aimed to develop a delivery truck scheduling management system using a decision tree to support decision-making in selecting a delivery truck. First-in-first-out (FIFO) and decision tree techniques were applied to prioritize loading doors for delivery trucks with the use of iterated local search (ILS) in recommending the route for the transport of goods. Besides, an arrangement of loading doors can be assigned to the door that meets the specified conditions. The experimental results showed that the system was able to assign the job to a delivery truck under the specified conditions that were close to the actual operation at a similarity of 0.80. In addition, the application of ILS suggested the route of the food delivery truck in planning the most effective transportation route with the best total distance.

Transportation industry is an important part of most countries’ economies with significant effects on productivity and social welfare. However, refrigeration has dramatically altered global food transportation efficiencies in the cold supply chain. Hence, a key factor to optimize transportation is by lowering operational costs, with distance travel having a considerable impact. The paper examines how the operational costs of different truck classes is influenced by the distance travelled. The operating cost equation was utilized to make a comparison between vehicle operating costs and to assess how these costs change in relation to travel distance. The equation consists of influential parameters such as fuel cost, driver wage, and maintenance cost of a vehicle. The result showed that the operating cost rate varies among trucks of different classes. According to the results of the equation and effective parameter analysis, 18-ton trucks had the highest cost, followed by 5-ton trucks. This is due to fact that the cost is influenced by factors of travel distance, tolls, and fuel consumption. Furthermore, based on transportation costs, a green practice framework can be constructed to reduce truck costs for each delivery while reducing CO2 emissions to the environment. By taking into account transportation cost factors in the framework of green practices, effective and practical information can be generated such as product delivery schedules to customers and better routes to improve business performance. Finally, effective transportation management can improve inventory flow by enhancing warehouse efficiency, reducing overall lead time, and saving on storage costs.

PurposeThis cross-sectional study aimed to evaluate the compliance of hygienic and technical standards of street food vendors in Slovenia with the requirements of the general hygienic food principals set in the Codex Alimentarius and Regulation (EC) No. 852/2004 on the hygiene of foodstuffs.Design/methodology/approachFood vendors were observed directly and discretely using a semi-structured observation sheet that allowed fast evaluation. The employee's behaviour was not affected during the observations because they were not aware of being observed. Each observation lasted approximately 30 min. Food vendors were divided into groups according to their location, type of facility, number of employees and type of food sold.FindingsDepending on the type of street vendor, more inconsistencies were found amongst food stands compared to food trucks and kiosks. Most food trucks and kiosks scored very high in both personal and hygienic-technical standards. Some of the major inconsistencies were lack of suitably located washbasins, improper hand-washing technique, improper waste management, working surfaces that were inadequately separated from consumers, and inconsistent maintenance of the cold chain. Food handlers have been confirmed as a critical risk factor.Research limitations/implicationsDespite methodology validation, the data was collected by a single observer, limiting the ability to obtain a more reliable estimate of the observations. The sample was disproportionate according to the type of street food facilities.Practical implicationsThe results provide a basis for (1) national professional guidelines of good hygiene practices for food business operators, which should cover street food vendors more extensively in future updates, and (2) the development of food safety training programmes tailored for street vendors.Originality/valueThe study provides valuable insights into current hygienic-technical conditions of the street food vending sector.

Advancements in digital technologies have allowed the creation of new digital franchise systems. Novel means of personnel and vehicle management methods have been generated using smart phone apps, with Uber transportation system being a classic example of these emerging management models. The purpose of this study is to investigate the possibility and compatibility of digital franchise systems in the management of food trucks, and propose effective recommendations for digital food truck franchises. A literature review was first carried out to compile information on digital franchising methods and traditional franchising management. In-depth interviews with several mobile food truck business owners and franchise operators were planned to acquire additional information on food truck franchises. These interviews focused on the challenges of franchise management as well as differences between conventional and digital franchise management systems in terms of communication of information from the franchise headquarters, ease of becoming a franchisee, no franchisee fees, and management and assessment systems. Finally, in order to acquire thorough information on Uber''s digital franchise management system, the researchers joined the Uber system and gained critical data on the company''s promotion strategies and franchise management methods. The results of the experience as well as information acquired from the interviews were then compiled to propose the concluding recommendations of this study. This study found that food truck franchises are highly compatible with digital franchising techniques. Licensors could review their franchisees using a digital management system to expedite the franchising process, and employ positioning systems to locate their fellow franchisees. Licensors could also utilize apps to communicate information quickly from their franchise headquarters and interact with their fellow franchisees as well. Digital franchise management systems could also include customer assessment programs to serve as an external quality control mechanism. Results of the study showed that digital technologies could establish food truck digital franchise management systems with exclusive advantages compared to conventional food and beverages franchise systems. Food truck franchisees could establish new franchise systems and use franchise advantages to seize more market opportunities.

During the sudden lockdown in 2019 people were primarily baffled by the change that came about. The limited availability of resources and accessibility shook each and every household. In a couple of months the food service industry saw a massive rate of laying over and thus great amounts of unemployment. These skilled individuals who were suddenly jobless still had to provide for their families. And those who depended on out sourced food faced a huge challenge as well. Guwahati was no exception and as was seen all over India a surge of cloud kitchens, home kitchens, home bakeries started and this new trend gave birth to entrepreneurs out of need. Thanks to social media, this information of those who needed and those who provided was exchanged and facebook, whatsapp, instagram was full of these entrepreneurs working from their home kitchen or a small rented space. In this research paper we seek to understand the popularity of entrepreneurship projects in Guwahati which started during the lockdown but did not end with it. There has been a major surge in the number of restaurants, QSRs, Cafes and food trucks that have come up post lockdown and are still developing. This research also shows how the youth of Guwahati has actively been a part of this revolution in the food scene of Guwahati, both as a stakeholder and consumer. And how this path encourages them to be an entrepreneur and support entrepreneurship.

The examples go on and on: loading fish in trucks and on barges to enable them to swim downstream; opening a water gate and drowning endangered birds in one area, or closing the gate and risk burning out habitat of the same species someplace else; spending more than $400 million a year to protect a handful of endangered species in just one region of a country; hatching endangered fish that end up too fat or stick out like neon in the water once released; releasing salmon trained to come to the surface for hatchery food when what is actually dropping from the sky are the ducks ready to eat them; keeping water in a reservoir to save the fish there, thus sacrificing other fish downstream; building a 250-foot-wide, 300-foot-high, $80 million device to better regulate the water temperature for salmon eggs in just one reservoir; controlled burning for fuel load management in the forests that harms not only air quality but also chronically bleeds pollution into adjacent aquatic ecosystems; breeding the wild properties out of endangered fish and releasing them, thereby polluting the gene pool of river fish; fighting urbanization to protect a green and open area, thereby condemning that area to monotonous, industrial agriculture and worse; closing a gate or releasing reservoir water in reaction to a sample of fish coming downstream and triggering electrical blackouts or the most severe urban water quality crisis in decades; restoring natural floodplains, erasing some of the oldest, best preserved, and greenest cultural landscapes in a country; putting in place even more massive infrastructure to keep ecosystems natural, thereby imprisoning them in intensive care units for life; and more. For some readers, these examples may appear a mix of the ridiculous and the desperate. Yet they are prime examples of a hard paradox at work: how do you reconcile the public’s demand for a better environment which requires ecosystem improvements with their concurrent demand for reliable services from that environment, including clean air, water, and power?

The value chain of agri-food is radically changed due the fact that consumers, as well as various players in the agro-logistics chain, seek for increased and trustful food safety. Given the specific characteristics of the agri-food supply chain, having numerous origin points, several aggregations hubs at different levels and then again numerous points of sales, the need of a holistic approach in collecting, forwarding and interpreting data in an interoperable way is a dire need. In this chapter, the authors present the architecture of the traceability platform KalaΘosTM and its IoT management module called, GP CoreIoTTM. The KalaΘos infrastructure includes a network of sensors devices at farms, equipment, trucks, aggregation, processing, and logistics facilities, connected to a network of LoRa gateways. Its open architecture focuses on semantic and syntactic interoperability approaches for joint exploitation of data collected and managed by other systems with similar aims and scope.

Nanotechnology can contribute to food security in supply chains of agri production-consumption systems. The unique properties of nanoparticles have stimulated the increasing interest in their application as biosensing. Biosensing devices are designed for the biological recognition of events and signal transduction. Many types of nanoparticles can be used as biosensors, but gold nanoparticles have sparked most interest. In the work presented here, we will address the problem of fruit and vegetable decay and rotting during transportation and storage, which could be easily generalized also onto post-harvest loss prevention in general. During the process of rotting, different compounds, including different gasses, are released into the environment. The application of sensitive bionanosensors in the storage/transport containers can detect any changes due to fruit and vegetable decay and transduce the signal. The goal of this is to reduce the logistics cost for this items. Therefore, our approach requires a multidisciplinary and an interdisciplinary approach in science and technology. The cold supply chain is namely a science, a technology and a process which combines applied bio-nanotechnology, innovations in the industrial engineering of cooling processes including sensors for temperature and humidity measurements, transportation, and applied mathematics. It is a science, since it requires the understanding of chemical and biological processes linked to perishability and the systems theory which enables the developing of a theoretical framework for the control of systems with perturbed time-lags. Secondly, it is a technology developed in engineering which relies on the physical means to assure appropriate temperature conditions along the CSC and, thirdly, it is also a process, since a series of tasks must be performed to prepare, store, and transport the cargo as well as monitor the temperature and humidity of sensitive cargo and give proper feedback control, as it will be outlined in this chapter. Therefore, we shall discuss how to break the silos of separated knowledge to build an interdisciplinary and multidisciplinary science of post-harvest loss prevention. Considering the sensors as floating activity cells, modelled as floating nodes, in a graph of such a system, an extended Material Requirement Planning (MRP) theory will be described which will make it possible to determine the optimal feedback control in post-harvest loss prevention, based on bionanosensors. Therefore, we present also a model how to use nanotechnology from the packaging facility to the final retail. Any changes in time, distance, humidity or temperature in the chain could cause the Net Present Value (NPV) of the activities and their added value in the supply chain to be perturbed, as presented in the subchapter. In this chapter we give the answers to the questions, how to measure the effects of some perturbations in a supply chain on the stability of perishable agricultural goods in such systems and how nanotechnology can contribute with the appropriate packaging and control which preserves the required level of quality and quantity of the product at the final delivery. The presented model will not include multicriteria optimization but will stay at the NPV approach. But the annuity stream achieved by improved sensing and feedback control could be easily combined with environmental and medical/health criteria. An interdisciplinary perspective of industrial engineering and management demonstrates how the development of creative ideas born in separate research fields can be liaised into an innovative design of smart control devices and their installation in trucks and warehouses. These innovative technologies could contribute to an increase in the NPV of activities in the supply chains of perishable goods in general.

With Columbia Arts Management, Inc. sponsoring thirteen transcontinental tours of the Chicago Opera Ballet (1956–1969), Page/Fisher finally found a self-sustaining vehicle for her unique gifts as a choreographer-storyteller-impresario and her populist vision of ballet. This chapter explores COB’s collaborative practices, ensemble spirit, and down-to-earth focus on character, drama, and story, revealing what some historians have theorized as a unique Chicago ethos. A genuine sense of affection and devotion existed between Page and her dancers of the period: Kenneth Johnson, Patricia Klekovic, Orrin Kayan, Dolores Lipinski, and Larry Long, who thought of themselves as “the nucleus” of her company. A steady stream of operas-into-ballets afforded choreographer, designer, and dancers the chance to exercise their theatrical imaginations; world-class guest artists, the opportunity to perform complex, dramatic roles; and audiences, the theatrical scaffolding of stories and music from the opera canon. The chapter tracks the logistics and reception of the thirteen-week, bus-and-truck tour of 1960, when reviewers recognized the combination of art and entertainment as top-notch, commenting on the inventiveness and innovation of productions and jam-packed auditoriums. A survey of works created by the choreographer in her prime—from Camille (1959) and Carmen (1960) to Die Fledermaus (1961), Mephistophela (1963), Carmina Burana (1965), and Bolero ’68—show the fecundity of Page’s choreographic imagination. A critique of the 1963 Ford Foundation ballet grants, which undermined COB and ballet training in Chicago, while supporting the efforts of far less prominent and experienced companies designated as satellites of New York City Ballet, concludes the chapter.

Abstract In this paper, we will discuss how to incorporate several of the QS-9000 quality system requirements into an existing ISO 9000 quality system. This expansion of the existing quality system will be cost effective and ensure that the continuous improvement program will meet its goals. The QS-9000 quality system was developed in 1994 by the "Big Three" automotive and truck producers in Detroit, Michigan. This document, originated in the United States, is based upon the International Standard: ISO 9001-94. It is mandatory that any supplier of goods and/or services to either Chrysler, Ford or General Motors must have their quality system registered to the QS-9000 standard. We believe that there can be benefits to non-automotive organizations if they will incorporate some of the QS-9000 clauses into their current ISO 9000 quality systems. We will discuss actual cases in the following areas: purchasing, safety, process control, training, business management and continuous improvement. We will show how these examples of quality system enhancement are both effective and efficient ways of driving cost reduction and process improvement programs. Cost of quality initiatives can be better managed.

Gas loss during transportation is an important technical and economic indicator in assessing the level of production costs and economic benefits of natural gas enterprises. As the gas pipeline transmission trade continues to expand in China, the problems of gas losses have become increasingly prominent. Take one joint-stock gas pipeline of CNPC for example; the total output is about 24.2 billion cubic meters in 2012, while the amount of gas losses has reached about 60 million cubic meters, which brings significant economic losses to the enterprise, so it is necessary to carry out study on gas losses during transportation in gas transmission trunk line. For a trunk line system, gas losses generally refer to the flow quantities reduction during the process of gas purchase, transportation and sale, considering the variation of gas pipeline inventory, the amount of self-consumed gas and venting amount. Gas loss during transportation is mainly caused by measurement error of metering devices, but it is also related to the calculation deviation of gas pipeline inventory and venting amount. In this paper, according to the flowmeter configuration in each station, the model of trunk line metering system is established, and the calculation method of flow measurement uncertainty of overall trunk line system is introduced. The early warning indicators of gas loss in different calculation cycle are obtained, by which the gas loss problems can be foud timely. A real case is introduced to evaluate its application of early warning indicators of gas loss. In the study of ultrasonic flowmeter, the influence of noise, gas component and dirty sediment on measurement error is analyzed. A transient simulation model of the trunk line has been built, based on the gas pipeline network simulation software TGNET, to analyze the influence of non-steady state on the calculation of gas pipeline inventory. Finally, some suggestions are made to lower gas losses during transportation from aspects of technical operations and management.

<div class="section abstract"><div class="htmlview paragraph">In this paper, we present the concept of automated park and charge functions in two different use cases. The main use case is automated driving in production and the other use case is within automated valet parking in parking garages. The automated park and charge in production is developed in the scope of the publicly funded project E-SELF in Germany. The central aim of this project is the development and integration of automated driving at the end-of-line in the production at Ford Motor Company's manufacturing plant in Cologne. The driving function thereby is mostly based upon automated valet driving with an infrastructure-based perception and motion planning. Especially for electric vehicles, the state of charge of the battery is critical, since energy is needed for all testing and driving operations at the end-of-line. In addition, long shipping, combined with a specific state of charge requirement at customer delivery, require recharging at the production facility. This recharging process is also an automated process with a robot and demands direct connection to the driving function. The main scope of this paper is the introduction of an energy demand calculation for the necessary charging operations. The developed tool allows multiple analyses for identifying further potentials in the production line. Based on a study of a Ford Mach-E it showed, that the highest energy demands are due to battery self-discharging during standstill, especially in the summer months. For a transport to the customer by train and truck, an energy demand of 2kWh within the production facility is estimated. Longer transport times, e.g. when the vehicle is shipped to the customer, the energy demand increases up to 4 kWh. Depending on the vehicle and application, the developed toolchain allows future optimization of recharging processes and also promotes automated park and charging, where the demands can be individually calculated by the park management system.</div></div>

Abstract This research presents a thorough description of a novel method for mitigating the consequences of incoming slug flow using dynamic simulation software. Additionally, it paves the way for future improvements in the model's deployment for real-time level controller tuning parameter adjustment. In the facilities that receive multiphase wet crude from numerous distant manifolds with a number of trunk lines of expansive terrain, slug flows are quite typical. Operational challenges are brought on by the slug flow. Slug flows alter high-pressure production trap (HPPT) levels and separation efficiency, which will negatively affect the quality of the produced water and the crude oil, making handling slug flows in gas-oil separation plant (GOSP) facilities particularly difficult. The objective of this study was to employ the dynamic simulation model to investigate the behavior of incoming slug flow to the inlet 3-Phase Separators and its ramifications on downstream equipment. The findings of the dynamic simulation are to be utilized to reduce the flow variability in downstream equipment by developing an appropriate level control scheme. This measure is aimed at enhancing the separation efficiency and conserving energy by minimizing the recycling operation of injection pumps. By utilizing HYSYS dynamic simulation model results, a novel control strategy was devised, involving the modification of the split range controller into two independent controllers. The larger valve controller was tuned for a slower response, whereas the smaller valve controller was set to be more aggressive. These adjustments improved level management and reduced the flow variations to Water Oil Separation (WOSEP) and downstream equipment. The newly developed control scheme was implemented in one of the HPPT’s and was further fine-tuned to minimize the level variations. The HPPT levels were able to be controlled automatically, as compared to the past practice of manual mode of operation. Additionally, the dynamic simulation results were employed to modify HPPT level settings to accommodate higher slug volumes, with the slug volume handling capacity increasing almost three-fold. The produced water quality from the WOSEP was enhanced, and the recycling operation of produced water pumps was reduced, resulting in energy conservation. The new logic reduced the flow variability and controllers could be operated in Auto mode. This resulted in the pumps operating at their BEP and improving energy efficiency.

COVID-19 brought the public’s attention to the critical value of transportation and supply chain workers as lifelines to access food and other supplies. This report examines essential job skills required of the middle-skill workforce (workers with more than a high school degree, but less than a four-year college degree). Many of these middle-skill transportation and supply chain jobs are what the Federal Reserve Bank defines as “opportunity occupations” -- jobs that pay above median wages and can be accessible to those without a four-year college degree. This report lays out the complex landscape of selected technological disruptions of the supply chain to understand the new workforce needs of these middle-skill workers, followed by competencies identified by industry. With workplace social distancing policies, logistics organizations now rely heavily on data management and analysis for their operations. All rungs of employees, including warehouse workers and truck drivers, require digital skills to use mobile devices, sensors, and dashboards, among other applications. Workforce training requires a focus on data, problem solving, connectivity, and collaboration. Industry partners identified key workforce competencies required in digital literacy, data management, front/back office jobs, and in operations and maintenance. Education and training providers identified strategies to effectively develop workforce development programs. This report concludes with an exploration of the role of Institutes of Higher Education in delivering effective workforce education and training programs that reimagine how to frame programs to be customizable, easily accessible, and relevant.
