This chapter explores how the loss of Prairie du Chien dealt a heavy blow at the British stronghold on Mackinac Island. Construction of Fort Shelby threatened the route by which the British supplied their Indian allies on the Mississippi. Supplies could still be distributed at Green Bay, Chicago, but for western tribes such as the Sioux and the Sauk, the Wisconsin River route was essential. Even to supply his own soldiers with food proved a constant struggle for the British commandant at Mackinac, and the constant throng of hungry allied Indians, usually accompanied by their families, often forced him to choose between depriving his own troops and alienating the Indians. The other danger threatening Mackinac was an American task force gathering under the command of Colonel George Croghan to retake the island.

Anaphylaxis is a severe life-threatening systemic hypersensitivity reaction, which occurs in approximately 10–20 per 100,000 population per annum, and accounts for 0.3% of adult critical care admissions. Anaphylaxis most commonly results from an exaggerated immune reaction to foreign antigens, prompting release of vasoactive substances from mast cells. A broad range of agents including foods, insect stings, latex, and drugs can trigger anaphylaxis. Common food allergens include nuts, shellfish, milk, and eggs. The most frequently implicated drugs include neuromuscular blocking agents (NMBAs) and antibiotics. The clinical features of anaphylaxis are variable and may occur together or in isolation. Epinephrine is the primary treatment for anaphylaxis, administered via the intramuscular route. Measurement of mast cell tryptase is essential for the diagnosis of anaphylaxis. Samples should be taken immediately, at 1–2 hours, and at 24 hours after the onset of symptoms. Investigations should be directed at identification of the trigger agent, and patients should be provided with information to enable them to avoid probable triggers and recognize future episodes.

Listeriosis occurs in a variety of animals including humans, and most often affects the pregnant uterus, the central nervous system (CNS) or the bloodstream. During pregnancy, infection spreads to the foetus, which will either be born severely ill or die in-utero. In non-pregnant animals, listeriosis usually presents as meningitis, encephalitis. In humans, infection most often occurs in the immunocompromised and elderly, and to a lesser extent the pregnant woman, the unborn, or the newly delivered infant. Infection can be treated successfully with antibiotics, however 20–40% of human cases are fatal..In domestic animals (especially in sheep and goats) listeriosis usually presents as encephalitis, abortion, or septicaemia, and is a cause of considerable economic loss.The genus Listeria comprises six species of Gram-positive bacteria. Almost all cases of listeriosis are due to Listeria monocytogenes although up to 10% of cases in sheep are due to Listeria ivanovii.Listeriae are ubiquitous in the environment worldwide, especially in sites with decaying organic vegetable material. Many animals carry the organism in the faeces without serious infection. The consumption of contaminated food or feed is the principal route of transmission for both humans and animals, however other means of transmission occur.Human listeriosis is rare (<1 to > 10 cases per million people in North America and Western Europe), but because of the high mortality rate, it is amongst the most important causes of death from food-borne infections in industrialized countries. In the UK, human listeriosis is the biggest single cause of death from a preventable food-borne disease. Listeriosis in domestic animals is a cause of considerable economic loss. Control measures should be directed towards both to exclude Listeria from food or feed as well as inhibiting its multiplication and survival. Silage which is spoiled or mouldy should not be used, and care should be taken to maintain anaerobic conditions for as long as possible.Dietary advice is available for disease prevention, particularly targeted at ‘at risk’ individuals to modify their diet to avoid eating specific foods such as soft cheese and pâté.

Fish display a wide range of adaptations of the mouth and pharynx for specific feeding patterns including planktivory, fin-biting, picking and scraping. Appetite control is complex, involving stimulatory and inhibitory hormones. The gut has a linear plan similar to other vertebrates but with considerable variation between taxa, and a stomach may be absent. Many bony fish possess pyloric caeca, containing digestive enzymes, and may increase surface area for digestion. In chondrichthyes (sharks, etc.), a ‘spiral valve’ increases surface area of the intestine. Smooth muscle contractions in the gut wall pass food along the tract under control of food pressure, the autonomic nervous system and specific peptides. Digestion by hydrolytic enzymes, and absorption occur in the intestine, monomers produced being absorbed mainly through transcellular routes, involving enterocytes, into the blood of the hepatic portal vein to the liver. Dietary requirements and nutrition are discussed.

Europe's insatiable demand for spices in the late Middle Ages (1200-1500 AD) is a remarkable example of dramatic historic change triggered by consumer preference. The spice trade is important to the history of food not only because of the trade routes and speculation about how to expand them, but also because of the reasons for the heavy demand in the first place. Tropical spices are not an essential ingredient of modern European cuisine. This article documents the spice trade during the medieval period. It first considers the ubiquity of spices in medieval gastronomy and medieval pharmacology. It then turns to the health benefits of spices to medieval food, the origins and imagined origins of spices, spice trade routes, and prices of spices.
