A alimentação humana compõe o conjunto de conteúdos escolares que objetiva a promoção de hábitos alimentares saudáveis. Porém, a escola acaba por fomentar práticas que corroboram uma ideologia carnista que se opõe à sustentabilidade e contribui para a perpetuação de um cenário ambiental que ameaça o futuro do planeta. Assim, esse trabalho objetivou, por meio de um estudo exploratório, tecer considerações de como a Educação Ambiental Crítica no ensino escolar pode contribuir para o debate do Carnismo e das mudanças climáticas, fomentando a Alfabetização em Nutrição, na perspectiva de ampliar a visão crítica da comunidade escolar sobre a formação de hábitos alimentares saudáveis e sustentáveis. Desta forma, contribuindo para a cidadania, pois a alimentação ultrapassa aquilo que colocamos no prato ou levamos a mesa, mas,também,se constitui em um posicionamento ético e políticoque cada indivíduo deve exercer na sociedade.

This article examines and analyzes the credibility and utility of the critique of veganism as a privileged lifestyle, both by those inside and by those outside the vegan community. Using the theory of intersectionality, I explain that the concept of vegan privilege is vague and lacks contextualization. I propose that veganism itself is not a privilege, but rather the ability to make food choices is ultimately the privilege. In addition, I argue that allegations of “vegan privilege” conceal and reinforce the cultural invisibility of speciesism and carnism. Although the ultimate mission of veganism is to eradicate animal exploitation, vegans must understand the animals are not the only ones that suffer. The structural and interactional process of “mindless eating” exploits both consumers and workers. I conclude by encouraging vegans and carnists alike to expand the circle of compassion and to understand the human costs of the capitalist industrial food complex.

The topic of “alternative proteins,” a field comprised of both plant-based animal product alternatives and the nascent field of cellular agriculture (eg, cultivated meat), has become a flashpoint for contemporary food system debate. This article introduces the “alternative protein ideological circle” as a framework for understanding the nature of this contestation, as well as the key stakeholder groups who animate the landscape. It argues that perspectives on alternative proteins coalesce around 2 primary ideological poles: (1) meat attachment or carnism, the extent to which people believe or do not believe that eating animals is a natural, normal, and necessary part of contemporary life; and (2) sociotechnical imaginaries, divided between techno-optimistic “wizards” and technoskeptical “prophets.” From there, 4 key stakeholder groups emerge: (1) the “high-tech vegans” (techno-optimists with low levels of carnism); (2) the “ecomodernists” (techno-optimists with high levels of carnism); (3) the “good foodies” (technoskeptics with low levels of carnism); and (4) the “carnivore traditionalists” (technoskeptics with high levels of carnism). The article offers illustrative examples of these groups, drawing from popular media and advocacy. It concludes with reflections on the implications of this framework for nutrition research and practice.

Las creencias que rodean la práctica de comer animales son ampliamente aceptadas y constituyen una ideología llamada carnismo. El objetivo de este estudio es validar el Inventario de carnismo, que mide dos componentes de dichas creencias: la defensa carnística y la dominación carnística. La defensa carnística legitimaría la práctica de comer animales basándose en argumentos que apuntan a la tradición, el gusto o la necesidad; mientras que la dominación carnística apoyaría la matanza de animales fundamentando en la noción de una jerarquía natural y del derecho que nos asiste de dominar a los animales y utilizarlos para nuestros fines. Se confirmó la estructura bidimensional y se logró buena consistencia interna para la escala completa (α=.735). Las dimensiones se correlacionaron positivamente (r=.407). La escala obtiene buenos índices de ajuste y podemos soportar la invariancia de tipo configuracional y métrica del Inventario de carnismo para hombres y mujeres.

The exceptional Pliocene marine faunal assemblages of west central Portugal have been known since the late 19th century. They include highly diverse molluscan faunas whose study is far to be completed. Discovered nearly 40 years ago, Vale do Freixo (Carnide, Pombal) is perhaps the most outstanding fossil site. Neverthless, the bivalves remain relatively unknown. This study focuses on the taxonomy of this relevant group of marine Mollusca. The research, based on a detailed sampling of three fossiliferous beds from the Carnide Formation, yielded a list of 85 species belonging to 75 genera and 32 families. Forty-three species are new for the Carnide area and twenty-three are reported for the first time in the Portuguese Pliocene, increasing to 115 the number of known species in the Mondego Basin in the Beira Litoral.

The Acartophthalmidae family includes tiny to small dark flies with hyaline or infuscate wings along the coast. Adults live in the forest, where they are associated with decaying substances such as wood, fungi, carrion, excrement and rotten meat. The Canacidae are found along the sea coasts, on the surface of small bodies of water, saline and fresh, in places protected from the wind. They feed on infusoria and other tiny organisms. In Carnidae, the larvae are saprophagous or coprophagous (they live in the litter of birds' nests). Pupae are enclosed within a puparium and bird nests are micro-ecosystems with diverse communities of invertebrates, from ectoparasitoids to commensal species. The objective of this manuscript was to carry out a survey of the Families Acartophthalmidae, Canacidae and Carnidae regarding their biology, ecology, geographic distribution, and taxonomy. The systematized bibliographic study, of the descriptive and exploratory type of the Families Acartophthalmidae and Canacidae. The bibliographic search included the LILACS databases at: http://www.bireme.br/, in electronic journals available at the SciELO and USP databases: http: //www.usp.br/ and in theoretical books, these banks, university dissertations, national and international scientific articles, scientific journals, documents. À partir des années 1920, un nouveau type d’alimentation florit dans les villes des États-Unis, avant de gagner le bord des grandes routes et les banlieues, puis de s’instaurer comme un symbole de la culture et du soft-power américain : le fast-food. Ces chaînes, avec McDonald’s en chef de file, séduisirent rapidement le pays. Si beaucoup d’études se sont penchées sur les États-Unis comme nation du fast-food, peu ont toutefois envisagé les liens historiques et actuels qui mêlent cette industrie à l’idéologie carniste, selon laquelle il est normal, naturel et nécessaire pour les êtres humains de manger d’autres animaux, ainsi que leurs sécrétions (œufs, produits laitiers). Cette thèse étudie la culture américaine au prisme des fast-foods et du carnisme. S’inscrivant dans la lignée des études animales critiques, elle tâche de rendre visibles les victimes exploitées et abattues au nom de l’alimentation américaine, au sein de laquelle les produits d’origine animale sont omniprésents. Il s’agit d’analyser l’impact des fast-foods sur la culture et la politique du pays, et de déterminer si l’ultra-carnisme de ces enseignes de restauration a engendré et normalisé un carnisme américain supersizé, lequel, via la mondialisation, s’est propagé à un grand nombre de nations « McDonaldisées ». L’alimentation carniste reposant sur la mise à mort d’êtres sentients, elle est dans ce travail recontextualisée et définie comme un phénomène violent, bien que cette violence soit le plus souvent inapparente, car liée, notamment, à l’invisibilisation systémique de ses victimes
In the 1920s, a new kind of food flourished in American cities before taking hold of the highways and the suburbs, and settling as a lasting symbol of American culture and soft power: fast food. Fast food franchises rapidly conquered the nation, with McDonald’s as their undisputed leader. Many studies have considered the United States through its unique relationship to fast food, but few have explored the way in which this industry is intertwined with carnism, the ideology according to which it is normal, natural and necessary for human beings to eat other animals as well as products obtained through their exploitation (eggs, dairy). This thesis studies American culture through the prism of fast food and carnism. Following into the footsteps of critical animal studies, it endeavors to restore the visibility of the victims exploited and slaughtered for food on a massive scale. It deals with the impact that fast foods have had on American culture and American politics, and seeks to determine whether the ultra-carnism of these restaurants has spawned a specific, supersized American carnism, which, through globalization, has spread to many “McDonaldized” nations. As carnism is a diet which relies on massive animal slaughter, this work understands it as a violent phenomenon, although this violence is often unnoticeable, as it is associated with the systematic invisibilization of its victims

O planeamento da cidade requer uma abordagem consciente no que diz respeito aos conflitos territoriais associados a diferentes níveis económicos, sociais, tecnológicos e urbanos. A cidade contemporânea que se expande de forma dispersa, contribui para a insustentabilidade do território, contrapondo-se ao idealismo de uma cidade mais equilibrada nas relações entre o homem e a natureza. Face a tal problemática, este Projeto Final de Mestrado propõe uma estratégia urbana com base no estudo da Resiliência Urbana, utilizando como caso de estudo Carnide. Neste território, caracterizado pelos contrastes entre as estruturas rurais e as novas urbanizações na periferia da capital, deve ser considerado a preservação da memória e da sua identidade. Contudo é uma área fortemente infraestruturada que gera altos níveis de fragmentação quando analisados a uma escala de maior proximidade. A Resiliência Urbana surge como tema gerador para a fundamentação e implementação de outros conceitos que contribuam para o equilíbrio entre a componente natural e a artificialização do território. Valorizando não só o planeamento consciente em relação aos sistemas naturais, assim como a ética e os valores do indivíduo correspondente ao sentido de responsabilidade pessoal para a vitalidade do planeta. Pretende-se com este projeto complementar o conhecimento tradicional com novos dados e novas tecnologias, possibilitando a sua incorporação em novos modelos urbanos que utilizem melhor os recursos naturais, sem comprometer a sua durabilidade, minimizando o risco de futuros desastres, aumentando assim a resiliência do território.
ABSTRACT: City planning requires a conscious approach regarding territorial conflicts associated with different economical, social, technological and urban levels. Contemporaneous city expands in a disperse form, contributing to territorial unsustainability, opposing the idealism of a more balanced city in the relationships between man and nature. Before such a problematic, this Master’s Degree Final Project proposes a urban strategy based on the study of Urban Resilience, utilizing Carnide as case study. In this territory, characterized by the contrasts between the rural structures and new urbanizations at the capital’s outskirts, should be considered the preservation of memory and its identity. Although it is an area strongly infra-structured which generates high levels of fragmentation when analysed at a more proximate scale. Urban Resilience appears as a generating theme for the substantiation and implementation of other concepts which contribute to the balance between the natural component and artificialization of territory. Valuing not only the conscious planning in relationship to the natural systems, just as the ethics and values of the individual corresponding to the sense of personal responsibility to the vitality of the planet. It is pretended with this project to complement the traditional knowledge with new data and new technologies, enabling its incorporation in new urban models that better utilize natural resources, without committing its durability, minimizing risk of future disasters, augmenting in this way the resilience of the territory.

Based on ethnographic experience of the encounter from natural and modern kitchens, a therapeutic healing house rises as a representation of a socio-ecological conflict that operates in the formation of different types of cookery expertise. Among 'modern chefs that naturalizes human taste', ‗barefoot female cooks' take us for a walk through the production fields, of commensality of natural foods in search of detailing the historical exclusion of female soul from the art of cookery (DORIA, 2013). Sensitized by a mind-and-body practice based on integrality, openness and attention, this barefoot women seek to grant legitimacy to female devir, in exercising alternative cure methods while facing a quarrelsome modern culinaric habitus responsible for reifying hodiern social gastro-anomie (FISCHLER, 1979). Different theoretical horizons, the dwell perspective (INGOLD, 2011) and acctancy (LATOUR, 1994), were gathered comparatively in order to compose a comprehensive analysis of a ‗eco-vegetarian‘ background, complemented by a parallel ethnographic immersion among producers of organic food in Brazil (ENCA) and Spain (WWOOF) in order to discuss emerging responsibilities in contemporary ecological devir, analysis the anti-ecology immanent in modern dietetic sciences.
Dedicada à investigação da emergência social do cozinheiro enquanto sujeito comedor, apresentamos uma etnografia sobre a estruturação da Cozinha Natural, e das ressignificação sócio-dietética decorrente de uma inversão da cosmo-ecologia gastronômica modernamente instituída. A casa de cura alternativa que nasce como representação de um conflito sociológico heteróclito, entre humanos e não-humanos, contextualiza a formação de uma expertise culinárica contemporânea - cozida no campo da construção da alteridade. O encontro fronteiriço entre as cozinhas natural e moderna ocorre em meio a um processo de legitimação social, de ‗cozinheiras de pés descalços‘ mediadas por uma experiência de desnaturalização do paladar e libertação da corpo feminino. A moderna exclusão do espírito feminino do recinto culinárico (DORIA, 2013) em favor dos chefs, figura como naturalização de nossa animalidade, na instituição de um habitus dietético carnista indesejado, reificador do atual estado de gastroanomia sociológico (FISCHLER, 1979). Uma análise compreensiva da prática dietética vegetariana e da intersubjetividade dos modos de vida consecutivos, é complementada por um empreendimento etnográfico entre produtores de alimentos orgânicos na Espanha.

This thesis uses an interdisciplinary Critical Animal Studies and Foucauldian Studies framework to argue that “humane” animal agribusiness is firmly implicated in the animal-industrial complex and thus poses major ethical, ecological and social justice issues. I use the term in/humane biopower to refer to the discursive power mechanisms used by the meat and dairy industries to control and manipulate public opinion surrounding the “question of the animal” (Derrida 12) as well as questions of ecological sustainability. An intersectional ecofeminist framework, which posits that nonhuman animals have subjectivity and therefore should be given moral and ethical consideration, is used to critique advertisements of “happy meat” as that which reify what Carol J. Adams has called the absent referent, which replaces the animal subject with the object of “meat”. The function of the absent referent is to allow for the moral abandonment of a being while also emptying violence from the language (Adams 41-42). I argue that the ubiquitous symbol of “happy meat” in carnist advertising and marketing is problematic in that it normalizes meat consumption by interpellating the individual as a consumer, not of violence or suffering, but of compassionate products. As my research shows, welfare discourses and regulations that aim to “improve” the lives of farmed animals justify new forms of violence against animals and do not signal the end of animal suffering. Furthermore, I observe that in/humane biopower reflects neoliberal forms of governance and citizenship where individual consumerism is seen as the answer to animal rights and ecological sustainability, rather than the radical political action I argue is necessary to rethink the centeredness of the human in the Anthropocene. I therefore conclude that ecofeminism and Critical Animal Studies alongside a Foucauldian critique of modern power provides fundamentally important lines of moral reasoning and questioning that can lead to truly sustainable and ethical outcomes for ourselves and for those beings with whom we share this planet.

Questa analisi è stata effettuata utilizzando il microscopio ottico, si tratta quindi di un lavoro di laboratorio.

Desde a sua criação, atribuída ao escultor António Ferreira nos finais de século XVII inícios do século XVIII, o Presépio de Santa Teresa de Carnide, de barro cozido policromado, teve uma história atribulada. Foi desmembrado no início do século XIX, com a extinção das últimas congregações religiosas, colocado em depósito e integrado finalmente em 1913 no acervo do MNAA. A sua aparência revela o estado díspar em que foi conservado até hoje. O projecto de exposição deste conjunto Natalício, criou a oportunidade de efectuar um estudo aprofundado deste tipo de objecto artístico e estabelecer de critérios de intervenção O trabalho de investigação foi auxiliado por análises laboratoriais que conduziram a um melhor conhecimento da obra e à definição dos tratamentos a efectuar.

Preeclampsia (PE) is a one of the most severe obstetrical complications characterized by the presence of hypertension in a previously normotensive woman, along with a variety of damages to specific organs in addition to the hypertension. While documented for a long time, PE represents one of the leading causes of maternal and perinatal morbidity and mortality and its aetiology and pathogenesis are still unclear. This needs to be addressed due to the serious and lifelong consequences that can affect the mother and her baby. In the past decades, metabolomics has proved to be particularly useful in understanding the biochemical mechanisms involved in the pathophysiology of PE and in the identification of biomarkers for its diagnosis. In this work, the polar and the lipid metabolite profile of 22 placental tissues of patients affected by PE compared with those of normotensive patients has been studied by high resolution liquid chromatography coupled with several technological platforms based on mass spectrometry including a triple quadrupole, a quadrupole time of flight mass spectrometer and ion mobility mass spectrometry prior to multivariate statistical data analysis. The results highlight differences in the levels of numerous compounds related to the metabolism of lipids, nucleotides and amino acids and these metabolites discriminate PE samples from samples from normotensive women. Decreased levels of several sphingolipid species belonging to the classes of ceramides and sphingomyelins as well as different glycerophospholipids such as lysoPC and PC in PE samples reflect the structural alteration of the placenta and the dysregulation of different cellular compartments. Impaired mitochondrial function with reduced fatty acid oxidation in PE was demonstrated by decreased levels of long-chain acylcarnitines while increased levels of those with short and middle chain suggest peroxisome fatty acid impairment. Decreased levels of several amino acids and nucleotides support the hypothesis of the activation of unfolded protein response of endoplasmic reticulum resulting in the inhibition of the synthesis of proteins, RNA and DNA. However, despite the significant reduction of the levels of several metabolites, the placenta might activate an adaptive response under stress conditions to modulate the cellular activity and ensure the essential functions for foetal growth including the oxidation of long-chain fatty acids and the creatine-phosphocreatine system. In conclusion, the application of metabolomics to placental samples represent a useful approach to understand possible pathological mechanisms and a valuable tool for the investigation of the molecular aspects of PE pathogenesis.

Uppsatsens syfte är att undersöka aktuella mediedebatter om köttkonsumtion ur ett djuretiskt perspektiv. Studien bygger på teorin om karnism och kritisk diskursanalys. Artikelsökningen gjordes genom Mediearkivet Retriever och avgränsades till de fyra största tidningarna i Sverige, Aftonbladet, Dagens Nyheter, Expressen och Svenska Dagbladet, från 2014 fram till idag. Det empiriska materialet bestod av 25 artiklar och ur dessa framkom fem diskurser: köttnormsdiskursen, djurrättsdiskursen, hälsodiskursen, marknadsdiskursen och miljödiskursen. Diskurserna gick ofta in i varandra och hade ofta fler än ett perspektiv. Studiens resultat visade att köttnormsdiskursen är den hegemoniska diskursen. Även om flera av artiklarna förespråkade konsumtion av enbart svenskt och ekologiskt kött, var köttkonsumtion ändå normen. Trots att köttkonsumtionen idag är rekordhög, var de flesta artiklarna oväntat eniga om att köttkonsumtionen måste minska drastiskt för hälsan, miljön och djurens skull.
The essay examines the recent media coverage of meat consumption from an animal ethical perspective. The study is based on the theory of carnism and critical discourse analysis. For the article search Mediearkivet Retriever was used and the search was limited to four main newspapers in Sweden, Aftonbladet, Dagens Nyheter, Expressen and Svenska Dagbladet. The time span was from the beginning of 2014 until today. The essays material consisted of 25 articles and from them five discourses were identified: The meat norm discourse, the animal rights discourse, the health discourse, the market economy discourse and the environmental discourse. The discourses often related to one another and often included more than one perspective. The study showed that the hegemonic discourse is the meat norm discourse. Although many of the articles were in favor of a drastic cut down of meat consumption, and suggested consumption of only Swedish and organic meat, the norm was still to consume meat. Although statistics show very high meat consumption, there seem to be a surprising consensus in the articles that meat consumption must decrease drastically, for health reasons, the environment and for the wellbeing of animals.

Annotation:
An exploration of the idea that tangible change could be made in the world when norms are unsettled rather than reinforced or left untouched. Bloom focuses on creating a space for the individual to re-define the outdated, toxic norms surrounding masculinity to explore ‘what men can be’. This is tied into questioning ‘what food can be’ — now and in the future — in relation to the norm of consuming animal food products in western societies. In collaboration with people who have actively reduced their meat consumption or identify as plant based or vegan, I have aspired to use my practice as a visual communicator to illustrate connections and reveal hidden narratives of these individuals who are already challenging these norms as change agents within society. The outcome is the Bloom Box — an interactive box containing their stories visualised with ‘out of the norm’ plant foods.
