Objective. Plant cell culture is an innovative technology to produce a variety of substances. Numerous plants synthesize among their secondary metabolites phenolic compounds which possess antioxidant and antimicrobial effects. Hawthorn (Crataegus) is one of these plants which has long been used in folk medicine and is widely utilized in pharmaceutical preparations mainly in neuro- and cardiosedative actions. Methods and Results. The production of polyphenol by fifty-two-week-old Crataegus azarolus var. aronia calli was studied in relation to growth variation and antioxidant and antimicrobial capacity within a subcultured period. The DPPH and ABTS+ assays were used to characterize the antioxidant actions of the callus cultures. Antimicrobial activity was tested by using disc diffusion and dilution assays for the determination of the minimal inhibitory concentration (MIC) and the minimal bactericidal concentration (MBC) values of each active extract. High TEACDPPH, TEACABTS, and antimicrobial activity was observed when maximal growth was reached. An optimum of total phenol, proanthocyanidins, flavonoid, (−)-epicatechin, procyanidin B2, chlorogenic acid, and hyperoside was produced during this period. Conclusion. Antioxidant and antimicrobial activities were strongly correlated with total phenols and total flavonoids. Crataegus azarolus var. aronia cells culture represents an important alternative source of natural antioxidants and antimicrobials.

Background:: In this review article, a brief overview of novel metallotherapeutic agents (with an emphasis on the complexes of essential biometals) promising for medical application is presented. We have also focused on the recent work carried out by our research team, specifically the development of redox-active antimicrobial complexes of sterically hindered diphenols with some essential biometals (copper, zinc, nickel). Results:: The complexes of essential metals (manganese, iron, cobalt, nickel, copper, zinc) described in the review show diverse in vitro biological activities, ranging from antimicrobial and antiinflammatory to antiproliferative and enzyme inhibitory. It is necessary to emphasize that the type of organic ligands in these metal complexes seems to be responsible for their pharmacological activities. In the last decades, there has been a significant interest in synthesis and biological evaluation of metal complexes with redox-active ligands. A substantial step in the development of these redox-active agents is the study of their physicochemical and biological properties, including investigations in vitro of model enzyme systems, which can provide evidence on a plausible mechanism underlying the pharmacological activity. When considering the peculiarities of the pharmacological activity of the sterically hindered diphenol derivatives and their nickel(II), copper(II) and zinc(II) complexes synthesized, we took into account the following: (i) all these compounds are potential antioxidants and (ii) their antimicrobial activity possibly results from their ability to affect the electron-transport chain. Conclusion:: We obtained novel data demonstrating that the level of antibacterial and antifungal activity in the series of the above-mentioned metal-based antimicrobials depends not only on the nature of the phenolic ligands and complexing metal ions, but also on the lipophilicity and reducing ability of the ligands and metal complexes, specifically regarding the potential biotargets of their antimicrobial action – ferricytochrome c and the superoxide anion radical. The combination of antibacterial, antifungal and antioxidant activity allows one to consider these compounds as promising substances for developing therapeutic agents with a broad spectrum of activities.

Recently, the use of Aloe species has become very widespread. These are extensively used as a nutraceutical in a variety of health care products and food supplements. In addition, the occurrence of the quickly adaptable microorganisms, particularly bacteria, which can develop resistance to antibiotics, is a major problem for public health, and therefore, it is necessary to search for new antimicrobials. In our study, the content of total phenols, proanthocyanidins, and proteins in fresh and lyophilized samples of A. arborescens and A. barbadensis and their ethanol extracts was investigated. Furthermore, enzymatic and antioxidant activity of samples were studied. Since antimicrobial activity of fresh samples was determined in our latest research, a more detailed study of antimicrobial effectiveness of A. arborescens and A. barbadensis (lyophilized, extracts) was performed. Ethanol extracts in particular contain higher concentrations of bioactive substances and show the topmost antioxidant activity. The novelty of the study refers to the observation of industrially important enzyme activities such as α-amylase, cellulase, lipase, peroxidase, protease, and transglutaminase in the samples as well as the microbial growth inhibition rates determination (MGIR) at different concentrations of added aloe samples. All samples inhibited the growth of all tested microbial cells. MIC90 for A. arborescens and A. barbadensis were also determined in case of B. cereus, P. aeruginosa, P. fluorescens, and S. aureus. The results of our study tend to give credence to the popular use of both aloes in medicine and in the cosmetic, food, and pharmaceutical industries.

Mosses are mainly the object of ecological and taxonomic research. This group of plants are still underestimated by scientists in other aspects of research. Recent research has shown that these plants contain remarkable and unique substances with high biological activity. Five species of mosses from a large urban ecosystem were identified for present study. In order to determine their biological potential, multifaceted studies were carried out, including: total phenolics content, antioxidant activity, antimicrobial and antifungal study, cytotoxicity evaluation, and scratch assay to assess pro-regenerative effect in the context of their possible use as the ingredients of biologically active cosmetics. Additionally, determination of individual phenolic compounds in selected extracts of the tested mosses was made. Research showed that Ceratodon purpureus and Dryptodon pulvinatus extracts had the greatest potential as antioxidants and antimicrobial activity. The cytotoxicity assessment indicated that the extracts from Dryptodon pulvinatus and Rhytidiadelphus squarossus exerted the strongest negative effect on mouse fibroblast line L929 viability at higher concentrations. While, the extract from Tortulla muralis best stimulated human foreskin fibroblast line HFF-1 proliferation and wound healing. The research on individual phenolic compounds content in the extracts tested indicated over 20 peaks on UPLC chromatograms. The conducted study has shown that mosses, especially so far unexplored species of open ecosystems, and e.g. epilytic habitats, may be a valuable source of biologically active substances and thus may constitute important medical and cosmetic possibilities.

Nowadays, edible coatings incorporated with nanostructures as systems of controlled release of flavors, colorants and/or antioxidants and antimicrobial substances, also used for thermal and environmental protection of active compounds, represent a gap of opportunity to increase the shelf life of food highly perishable, as well as for the development of new products. These functionalized nanostructures have the benefit of incorporating natural substances obtained from the food industry that are rich in polyphenols, dietary fibers, and antimicrobial substances. In addition, the polymers employed on its preparation, such as polysaccharides, solid lipids and proteins that are low cost and developed through sustainable processes, are friendly to the environment. The objective of this review is to present the materials commonly used in the preparation of nanostructures, the main ingredients with which they can be functionalized and used in the preparation of edible coatings, as well as the advances that these structures have represented when used as controlled release systems, increasing the shelf life and promoting the development of new products that meet the characteristics of functionality for fresh foods ready to eat.

Plant materials and preparations based on it continue to play an important role in the pharmacotherapy of many chronic and sluggish human diseases. Over the past two decades, there has been a very high consumer demand for medicines and preventive products obtained from natural plant sources. This is due to the complex effect of biologically active substances, vitamins, antioxidants of plant origin on the human body and the practical absence of side effects. An analysis of the development of phytopharmacology shows that the most promising direction in the field of the development of phytopreparations is the scientifically based use of the experience of traditional and modern medicine. One of the promising types of raw material - medicinal plant safflower (Carthamus tinctorius L). It contains vitamins A, E, unsaturated fatty acids and other biologically active substances in large quantities, that determine antimicrobial, antifungal, anti-inflammatory, antioxidant properties. Thanks to these pharmacological effects, the content of vitamins is promising for the development and introduction of a drug used in the field of ophthalmology. To this end we have searched and analysed scientific publications about safflower – Carthamus tinctorius. All studies used in this review have been found using «Google Scholar» scientific search engine and were selected from publications indexed in Web of science, PubMed, Medline, E–library, and Cyberleninka databases.

Introduction. Infectious diseases remain a serious threat to humanity worldwide as bacterial pathogens grow more diverse. Bacteria, fungi, and parasites develop resistance to clinically approved antimicrobials, which reduces the efficacy of available drugs and treatment measures. As a result, there is an ever growing demand for new highly effective pharmaceuticals. This review describes mono- and polynuclear platinum and palladium complexes with antimicrobial properties. We compared several groups of antibacterial agents: antibiotics, antioxidant biologically active substances, antimicrobial nanoparticles, nanocomposite materials, biopolymers, micellar systems, and plant extracts. Study objects and methods. The review covered relevant articles published in Web of Science, Scopus, and Russian Science Citation Index for the last decade. The list of descriptors included such terms as mononuclear and binuclear complexes of platinum, palladium, and antimicrobial activity. Results and discussion. Chelates of platinum, palladium, silver, iridium, rhodium, ruthenium, cobalt, and nickel are popular therapeutic agents. Their antimicrobial activity against pathogenic microorganisms can be enhanced by increasing their bioavailability. Metalbased drugs facilitate the transport of organic ligands towards the bacterial cell. The nature of the ligand and its coordination change the thermodynamic stability, kinetic lability, and lipophilic properties of the complex, as well as the reactivity of the central atom. Polynuclear platinum and palladium complexes contain two or more bound metal (coordinate) centers. Covalent bonding with bacterial DNA enables them to form a type of DNA adducts, which is completely different from that of mononuclear complexes. Conclusion. Metal-based drugs with functional monodentate ligands exhibit a greater antimicrobial effect compared to free ligands. Poly- and heteronuclear complexes can increase the number of active centers that block the action of bacterial cells. When combined with other antibacterial agents, they provide a synergistic effect, which makes them a promising subject of further research.

The design of functional foods has grown recently as an answer to rising consumers’ concerns and demands for natural, nutritional and healthy food products. Nanoencapsulation is a technique based on enclosing a bioactive compound (BAC) in liquid, solid or gaseous states within a matrix or inert material for preserving the coated substance (food or flavor molecules/ingredients). Nanoencapsulation can improve stability of BACs, improving the regulation of their release at physiologically active sites. Regarding materials for food and nutraceutical applications, the most used are carbohydrate-, protein- or lipid-based alternatives such as chitosan, peptide–chitosan and β-lactoglobulin nanoparticles (NPs) or emulsion biopolymer complexes. On the other hand, the main BACs used in foods for health promoting, including antioxidants, antimicrobials, vitamins, probiotics and prebiotics and others (minerals, enzymes and flavoring compounds). Nanotechnology can also play notable role in the development of programmable food, an original futuristic concept promising the consumers to obtain high quality food of desired nutritive and sensory characteristics.

Edible films are among the most promising fields in food science over the last decade due to their versatility (they can be made from a wide array of materials) and because they can be used as carriers of different active substances, like antioxidants, antimicrobial agents, and essential oils from plants. In the case of the essential oils, their inclusion in edible films is limited by their low water solubility. Nanoemulsions are thermodynamically stable and transparent systems that can be used as a way of incorporating essential oils into edible film matrices. In this paper, we developed lemongrass and rosemary essential oil nanoemulsions by using a low-energy method, observing the effect of the surfactant/oil ratio in their physicochemical properties. Then we studied the effect of the nanoemulsions concentration incorporated into banana starch edible films. We observed that essential oils’ nanoemulsions have a plasticizing effect increasing the film’s water vapor permeability, transparency, and elongation at break, while the hydrophobic nature of the essential oils lead to a decrease in their water solubility.

Flavonoids, polyphenolic heteronuclear compounds which are naturally occurring antioxidants are widely used as antiaging substances. Synthesis of new naturally occuring organic compounds with basic skeleton of chalcones, flavones and oxygenated flavones and their antimicrobial activity were reported by this research group for long. Presently comparative molecular field analysis (CoMFA) implemented in Sybyl 7.3 was conducted on a series of substituted flavones. CoMFA is an effective computer implemented 3D QSAR technique deriving a correlation between set of the biologically active molecules and their 3D shape, electrostatic and hydrogen bonding characteristics employing both interactive graphics and statistical techniques. Evaluation of 38 compounds were served to establish the models with grid spacing (2.0 Å). CoMFA produced best predictive model for compound 1C (2 ? Phenyl ? 1,4 ? benzopyrone) and compound 2C (5 ? Fluoro ? 3?? hydroxy flavone ) among all. Model for compound 2C [r2 conv (no-validation) = 0.956, SEE = 0.211, F value = 111.054) is better than that of compound 1C [r2 conv (no-validation) = 0.955, SEE = 0.212, F value = 110.261) but comparing superimposed model 1C being suggested as the best predictive model. 3D contour maps were generated to correlate the biological activities with the chemical structures of the examined compounds and for further design. [ES] El envasado activo es una de las tecnologías emergentes más relevantes de la industria alimentaria. Su objetivo es interactuar con el espacio de cabeza del envase para controlar las reacciones enzimáticas, químicas, físicas y microbiológicas que deterioran los alimentos por medio de la absorción o liberación. La actual tesis doctoral trata originalmente del desarrollo y la caracterización de estructuras de envasado de alimentos activas y biodegradables mono y multicapa basadas en materiales de polihidroxialcanoatos (PHA) electroestirados derivados de estrategias de bioeconomía circular. Con el fin de dotar con propiedades activas los materiales de envasado, se incorporaron a los PHA aceites esenciales, extractos naturales, nanopartículas metálicas o combinaciones de los mismos mediante electrospinning de soluciones. Las fibras resultantes de PHA por electrospinning se recocieron para obtener monocapas continuas que, posteriormente, se combinaron con películas de polímeros biodegradables fundidas, sopladas o fundidas con disolventes y/o con revestimientos de barrera de nanocristales de celulosa bacteriana (CNC) para desarrollar novedosos sistemas multicapa con propiedades antimicrobianas y de barrera. Estos sistemas multicapas basados en PHA presentaron un buen rendimiento térmico y mecánico, así como altas propiedades de barrera a los vapores y gases. Las películas activas también mostraron mejores propiedades antioxidantes y una alta actividad antimicrobiana contra las bacterias transmitidas por los alimentos tanto en sistemas abiertos como, lo que es más importante, en sistemas cerrados, que pueden imitar las condiciones de envasado en casos reales. Por lo tanto, los materiales y prototipos desarrollados en este trabajo pueden ser muy prometedores como materiales de envasado, para constituir bandejas, flow packs y tapas, siendo completamente renovables y también biodegradables, con una potencial capacidad de aumentar tanto la calidad, como la seguridad de los productos alimenticios en el nuevo contexto de la Bioeconomía Circular.

L'actual tesi doctoral tracta originalment de el desenvolupament i la caracterització d'estructures d'envasat d'aliments actives i biodegradables mono i multicapa basades en materials de polihidroxialcanoatos (PHA) electroestirados derivats d'estratègies de bioeconomia circular. Per tal de dotar amb propietats actives dels materials d'envasat, es van incorporar als PHA olis essencials, extractes naturals, nanopartícules metàl·liques o combinacions dels mateixos mitjançant electrospinning de solucions. Les fibres resultants de PHA per electrospinning es recocieron per obtenir monocapes contínues que, posteriorment, es van combinar amb pel·lícules de polímers biodegradables foses, bufades o foses amb dissolvents i / o amb revestiments de barrera de nanocristalls de cel·lulosa bacteriana (CNC) per desenvolupar nous sistemes multicapa amb propietats antimicrobianes i de barrera. Aquests sistemes multicapes basats en PHA van presentar un bon rendiment tèrmic i mecànic, així com altes propietats de barrera als vapors i gasos. Les pel·lícules actives també van mostrar millors propietats antioxidants i una alta activitat antimicrobiana contra bacteris transmeses pels aliments tant en sistemes oberts com, el que és més important, en sistemes tancats, que poden imitar les condicions d'envasament en casos reals. Per tant, els materials i prototips desenvolupats poden ser molt prometedors com materials d'envasat, per constituir safates, flow packs i tapes, sent completament renovables i també biodegradables, amb la capacitat potencial final d'augmentar tant la qualitat, com la seguretat de els productes alimentaris en el nou context de l'Bioeconomia Circular.
[EN] Active packaging is one of the most relevant emerging technologies in the food industry. It aims to interact with the packaging headspace to control the enzymatic, chemical, physical, and microbiological reactions that deteriorate food through scavenging or releasing means. The current PhD thesis originally deals with the development and characterization of mono and multilayer active and biodegradable food packaging structures based on electrospun polyhydroxyalkanoates (PHA) materials derived from circular bioeconomy strategies. In order to provide the packaging materials with active properties, essential oils, natural extracts, metallic nanoparticles or combinations thereof were incorporated into PHA by solution electrospinning. The resultant electrospun PHA mats were annealed to obtain continuous monolayers that were, thereafter, combined with cast-extruded, blown or solvent-casted biodegradable polymer films and/or barrier coatings of bacterial cellulose nanocrystals (CNCs) to develop novel multilayer systems with antimicrobial and barrier properties. These PHA-based multilayers systems presented good thermal and mechanical performance as well as high barrier properties to vapors and gases. The active films also showed improved antioxidant properties and high antimicrobial activity against food-borne bacteria in both open and, more importantly, closed systems, which can mimic real case use packaging conditions. Therefore, the here-developed materials and prototypes can be very promising as packaging materials, to constitute trays, flow packs and lids, being completely renewable and also biodegradable, with the final potential capacity to increase both quality and safety of food products in the new Circular Bioeconomy context.

Os óleos essenciais e a própolis vermelha são reconhecidos pela atividade antimicrobiana e capacidade antioxidante, e têm sido utilizados em filmes à base de biopolímeros como agentes ativos. O objetivo geral desta tese foi o desenvolvimento de filmes à base de gelatina contendo extrato etanólico de própolis vermelha (EEP) e óleo essencial de cravo (OE cravo), de manjericão (OE manjericão) ou de hortelã (OE hortelã), e aplicação na conservação de carne bovina moída. O EEP e OE´s foram caracterizados em relação ao conteúdo de fenóis totais, atividade antioxidante (ABTS e DPPH) e atividade antimicrobiana contra bactérias Gram (+) S. aureus, L. monocytogenes e bactérias Gram (-) E. coli e S. enteritidis. Foram elaborados filmes com diferentes concentrações de OE´s (8 tratamentos) seguindo um delineamento experimental simplex com dois componentes, e quatro filmes controles: gelatina; gelatina e EEP, gelatina e OE cravo, gelatina e OE manjericão. Os filmes foram caracterizados em relação a conteúdo de fenóis, capacidade antioxidante, atividade antimicrobiana, umidade e solubilidade, propriedades mecânicas (tração e perfuração), propriedades óticas e barreira à luz, permeabilidade ao vapor de água (PVA). Também foram realizadas análises por espetroscopia de infravermelho com transformada de Fourier (FTIR), por difração de raios x (DXR), por calorimetria diferencial de varredura (DSC), e por microscopia eletrônica de varredura (SEM) e microscopia de força atômica (AFM). O filme ativo que apresentou melhor atividade antimicrobiana e capacidade antioxidante e os filmes controles, foram acondicionados a 4 °C e 58%UR por quatros semanas para avaliação da estabilidade antioxidante e antimicrobiana. Amostras de carne bovina moída foram recobertas com o filme ativo e filmes controles, e acondicionadas a 4 ± 2 °C por 10 dias, com avaliações nos dias 0, 3, 7 e 10 de parâmetros cromáticos, índice de peróxidos (IP) e atividade antimicrobiana frente a coliformes totais, aeróbios mesófilos e S. aureus. Observou-se que o EEP apresentou capacidade antioxidante e atividade antimicrobiana, dependentes do tratamento de extração. Foram adicionados no filme de gelatina o EO cravo e OE manjericão por apresentarem atividade antimicrobiana e capacidade antioxidante maior que OE hortelã. A adição de EEP e OE´s na matriz de gelatina proporcionou um aumento no conteúdo de fenóis totais nos filmes. As propriedades mecânicas foram alteradas com a adição dos OE´s e propriedades óticas e barreira a luz UV-Vis pela adição de EEP. A umidade, solubilidade, PVA não foram modificadas drasticamente com a adição dos compostos ativos. Propriedades térmicas, cristalinidade e os resultados das análises espectrofotométricas FTIR apresentaram discretas modificações. O filme ativo e filmes controles diminuíram o crescimento microbiano nas amostras de carne bovina moída comparado com à amostra controle, além de apresentar diminuição no IP ao longo do tempo. Pode-se concluir que a adição de EEP e OE´s melhorou algumas propriedades físicas, além de conferir atividade antimicrobiana e antioxidante aos filmes de gelatina que podem ser aplicados na conservação de alimentos de baixa ou intermediária umidade e susceptíveis à oxidação lipídica.
Essential oils and red propolis are recognized by its antimicrobial activity and antioxidant capacity, and have been used in films based on biopolymers as active agents. The general objective of this thesis was the development of gelatin-based films added with red propolis ethanolic extract (EEP) and essential oil of clove (OE clove), basil (OE basil) and mint (OE mint), and its application for conservation of ground beef. The EEP and OE\'s were characterized in relation to the total phenol content, antioxidant capacity (ABTS and DPPH) and antimicrobial activity against Gram (+) bacteria S. aureus, L. monocytogenes and Gram (-) bacteria E. coli and S. enteritidis. Films with different concentrations of EO clove and EO basil (8 treatments), following a simplex experimental design with two components, and four control films were prepared: gelatin, gelatin and EEP, gelatin and OE clove, gelatin and OE basil. The films were characterized in relation to phenols content, antioxidant capacity, antimicrobial activity, moisture and solubility, mechanical properties (tensile strength and puncture tests), optical properties and light barrier, water vapor permeability (WVP). Moreover, analyses were performed by fourier transform infrared spectroscopy (FTIR), by X-ray diffraction (DXR), by differential scanning calorimetry (DSC), and by scanning electron microscopy (SEM) and atomic force microscopy (AFM). The active film that showed better antimicrobial and antioxidant capacity and controls films were stored at 4 °C and 58% RH for four weeks to evaluate antioxidant and antimicrobial stability. Ground beef were coated with active film and controls films and conditioned at 4 ± 2 ° C for 10 days, with evaluations on days 0, 3, 7 and 10 of the color parameters, peroxide value (PV) and antimicrobial activity against total coliforms, aerobic mesophiles and S. aureus. The EEP presented antioxidant capacity and antimicrobial activity, depending on the extraction treatment. OE clove and OE basil were added to the gelatin film because they presented antimicrobial activity and antioxidant capacity higher than OE mint. The addition of EEP and OE\'s in the gelatin matrix provoked an increase in the content of total phenols in films. The mechanical properties were altered with the addition of OE\'s and optical properties and UV-Vis light barrier by addition of EEP. The moisture, solubility, PVA did not change strongly with the addition of the active compounds. Thermal properties, crystallinity and FTIR spectrophotometric results presented slight modifications. The active film and control films decreased the microbial growth in ground beef samples compared to the control sample, besides showing decrease in the PV over time. It can be concluded that the addition of EEP and OE\'s improved some physical properties, besides conferring antimicrobial and antioxidant activity to the gelatin films that can be applied in the preservation of foods of low or intermediate moisture and susceptible to lipid oxidation.

Subtropical wild fruits are a reservoir of microbial diversity and represent a potential source of beneficial microorganisms. Wild fruits provide essential nutrients, minerals, and antioxidants that contribute to human health. Many of these wild fruits are used by indigenous peoples for medicine and food, but there is yet an unexplored potential in the study of their properties and benefits. Wild fruits from the Amazon region and their associated active substances or bacterial communities can prevent disease, provide appropriate nutrition, contribute to new sources of income, and improve lives. Despite its condition as a megabiodiverse country, Ecuador suffers from limited access to its genetic resources, and particularly for research. A total of 41 isolates were obtained from six wild Amazonian fruit species and were molecularly classified into the genera Lactiplantibacillus (31 isolates), Lactococcus (3 isolates), Weissella (3 isolates), and Enterococcus (1 isolate). Three isolates showed large divergence in sequence variability and were not identified by the taxonomic assignment algorithm. Inferred phylogenies on the 16S rRNA gene explained the relationship between lineages and their origin. Carbohydrate metabolism and antimicrobial profiles were evaluated, and the isolates were classified from a functional perspective. Antimicrobial profiles showed a wide-range spectrum against several Gram-positive and Gram-negative bacteria. To our knowledge, this is the first study assessing the diversity of LAB in native tropical fruits from the Amazon region of Ecuador and their promising functional properties. The obtained isolates and their assessed properties are valuable genetic resources to be further investigated for industrial and pharmaceutical applications.

Food polyphenols constitute a large family of substances with beneficial properties in a large group of communicable and non-communicable diseases. These compounds support and improve the body’s defences against oxidative stress and are helpful in the prevention of pathologies related to metabolic syndrome. Furthermore, they exhibit anti-inflammatory, antiviral, and antimicrobial properties. This chapter draws attention to certain nutritional components such as hesperidin and quercetin, which are emerging as good candidates for a complementary beneficial effect in the case of diseases caused by viruses, including COVID-19. These nutraceuticals have a complex mechanism of action, which involves both cellular defence against oxidative stress and the modulation of inflammation, which although normally is a defence, repair and activation mechanism of the immune system, it can elude its controls and become a systemic and destructive pathology (cytokine storm, respiratory distress syndrome). Furthermore, recent in silico simulation tests suggest that both hesperidin and quercetin may interfere with SARS-CoV-2 by binding to cell receptors and the proteolytic enzymes involved in its replication. In addition to the inhibitory effects on the virus at cellular level, the two flavonoids can have indirect effects in respiratory infectious diseases as they prevent or improve metabolic and vascular comorbidities that can complicate the clinical course. This brief review focuses on biochemical and pharmacological mechanisms of action of polyphenols in the context of the revaluation of dietary approaches to the prevention and treatment of infectious diseases caused by viruses, with a special application to COVID-19.

Ginger (Zingiber officinale) has been traditionally employed in south East Asia as well as India and China for treatment of nausea, asthma, fever, vomiting, cough, constipation, pain, arthritis, inflammation, etc. This chapter discusses the phytochemical composition and pharmacological studies of ginger extracts, ginger essential oil (GEO), and active bioactive constituents. The essential oil of fresh and dry ginger was ranged between 0.2% - 2.62% and 0.72% - 4.17% respectively. The bioactive constituent zingiberene, β-sesquiphellandrene, curcumene, β-bisabolene, β-farnesene, camphene, and gingerol and shogal are the major constituents in ginger extracts. These compounds are chief bioactive substances responsible for pharmacological activities such antioxidant, antidiabetic, anticancer, anticoagulant, antiradiation, anti-inflammatory, gastrointestinal, antimicrobial, cardiovascular, anti-obesity, and weight loss effects. Future research needs to investigate the suitable duration, maximum dosage of ginger, concerns of overdosage, and its side effects in animal models and humans.

Ginseng is helpful in the treatment of microbial infection, inflammation, oxidative stress, diabetes, and obesity. Nanoparticles and nanocomposite film technologies had developed in it as novel drug delivery for cancer, inflammation, and neurological disorder. Multifaceted ginseng will be crucial for future development. This chapter review pharmacological, phytochemical, and pharmacognostic studies of this plant.

The roles of diet and environment on health have been known since ancient times. Cancer is both a genetic and an epigenetic disease and a complex interplay mechanism of genetic and environmental factors composed of multiple stages in which gene expression, protein and metabolite function operate synchronically. Disruption of epigenetic processes results in life-threatening diseases, in particular, cancer. Epigenetics involves altered gene expression without any change of nucleotide sequences, such as DNA methylation, histone modifications and non-coding RNAs in the regulation of genome. According to current studies, cancer is preventable with appropriate or balanced food and nutrition, in some cases. Nutrient intake is an environmental factor, and dietary components play an importent role in both cancer development and prevention. Due to epigenetic events induce changes in DNA and thus influencing over all gene expression in response to the food components, bioactive compounds and phytochemicals as potent antioxidants and cancer preventive agents have important roles in human diet. Several dietray components can alter cancer cell behavior and cancer risk by influencing key pathways and steps in carcinogenesis, including signaling, apoptosis, differentiation, or inflammation. To date, multiple biologically active food components are strongly suggested to have protective potential against cancer formation, such as methyl-group donors, fatty acids, phytochemicals, flavonoids, isothiocyanates, etc. Diet considered as a source of either carcinogens that are present in certain foods or acting in a protective manner such as vitamins, antioxidants, detoxifying substances, chelating agents etc. Thus, dietary phytochemicals as epigenetic modifiers in cancer and effects of dietary phytochemicals on gene expression and signaling pathways have been widely studied in cancer. In this chapter, current knowledge on interactions between cancer metabolism, epigenetic gene regulation, and how both processes are affected by dietary components are summerized. A comprehensive overview of natural compounds with epigenetic activity on tumorogenesis mechanisms by which natural compounds alter the cancer epigenome is provided. Studies made in epigenetics and cancer research demonstrated that genetic and epigenetic mechanisms are not separate events in cancer; they influence each other during carcinogenesis, highlighting plant-derived anticancer compounds with epigenetic mechanisms of action, and potential use in epigenetic therapy. Recent investigations involving epigenetic modulations suggest that diet rich in phytochemicals not only reduce the risk of developing cancer, but also affect the treatment outcome.

Given the general trend of energy consumption, which leads to an increase in the amount of energy consumed worldwide, the cost of this energy is constantly increasing and its deficit is growing. Therefore, it is important to solve the problem of creating and large-scale implementation of modern energy-efficient heat technologies that reduce energy. This is especially true for providing the population to food, as an additional complication is that the production and processing of agricultural raw materials occurs in conditions of increased consumption of gas and other energy sources with low coefficient of performance and high losses of raw materials during processing. Food and nutrition play a leading role in everyone's life, no matter how we treat it. Nutrition is a key moment in the life of every living organism. Functional foods have evolved as a separate category and are not always considered as dietary supplements. Functional food products (FFP) are the products influencing a functional condition of an organism for the purpose of its increase - resistance, working capacity, prolongation of life. Although the definitions of functional products are different, they are basically ordinary foods and beverages, but enriched with a functional component - a nutrient that plays a special physiological role in the body, has a positive effect on human health. The purpose of the paper is a theoretical and experimental substantiation of complex and efficient processing of vegetable raw materials, creation of energy-efficient heat technology of agricultural raw materials processing in order to obtain functional products with maximum preservation of biologically active substances. In this work, 4 groups of functional foods were studied (according to the classification of the main plant functional ingredients of Doctor of Technical Sciences Petrova Zh.O.) - these are antioxidants, phytoestrogens, folates, prebiotics. An important point is to increase energy efficiency with maximum preservation of functional ingredients of raw materials. Preliminary preparation of raw materials for drying was developed and researched, optimal dehydration regime parameters were selected, which allow to reduce energy consumption for the process and to keep BAS for each group of functional raw materials at a high level. Since the increase in energy costs for drying is associated with the difficulty of removing moisture from plant material, it was important to investigate changes in the specific heat of evaporation of water from functional compositions. The conducted experimental researches confirmed the theoretical assumption of dependence of specific heat of evaporation of water from parenchymal fabrics of plants on composite components of raw materials. The obtained results allow to state that at correctly picked up compositions they not only stabilize components of native raw materials, but also there is an intensification of drying process with reduction of energy consumption on process. The duration of the drying process of functional raw materials on the experimental convective stand was calculated by the method of Krasnikov V.V. The estimated drying durations of functional raw materials and drying rates are determined. The kinetics of heat exchange was studied with the determination of the specific heat flux density and the Rebinder number, which proves the efficiency of the introduction of step drying regimes.
